This was a great meal that I made for mother’s day for my mother, grandmother and my aunt. Everyone loved it. I served it with Sautéed asparagus, Rice pelof, and a Hawaiian Mac salad from the loft.

Pork loin

  • 1 or 2 pork loins depending on how many people
  • Olive oil

Rub

  • 1-part Special shit
  • 1-part Grizzly Joes trail dust

Spray

  • 1-part apple cider vinegar
  • 2 parts water
  • 1 bunch of asparagus
  • Olive oil
  • ½ teaspoon Mrs. dash
  • ½ teaspoon garlic powder
  • ½ teaspoon lemon pepper
  • Juice of half a lemon

Directions:

  1. Mix equal parts of the Special shit and Grizzly Joes in a bowl mix until well blended
  2. Rub the pork loins with the olive oil
  3. Then rub the loin with the spice mix
  4. Put in the fridge for at least 30 mins
  5. In a spray bottle mix the vinegar and water
  6. Using a traeger grill smoke to 30 mins
  7. Spray the loins with the mix about every 15 to 20 mins until they are done.
  8. Turn the grill up to 350 degrees and cook the for about an hour or until the pork loins reach 165 degrees’ internal temp

Sautéed asparagus

Ingredients:

  • 1 bunch of asparagus
  • Olive oil
  • ½ teaspoon Mrs. dash
  • ½ teaspoon garlic powder
  • ½ teaspoon lemon pepper
  • Juice of half a lemon

Directions:

  1. Clean the asparagus trimming off the woody bottoms
  2. Heat olive oil in a frying pan over medium heat
  3. Add in the asparagus
  4. Sprinkle the seasoning over the asparagus
  5. Cook until your desire doneness I usually cook them to until they start to soften.
  6. Just before they are done squeeze the lemon juice over the top.
